Veronica, our middle child, is turning seven on Wednesday, and has begged for a strawberry-chocolate cake. First of all, Ew. Secondly, how am I going to pull this off?

ReplyDeleteThere are 2 kinds of "sugar" that I use, and neither of them affect the blod suger levels unlike Aspartame or Sucralose which they use in diet coke.
They are also 100% natural and no creepy/funcky chemical process is involed in manufracturing.
Stevia: Its 250 times stronger than normal suger which makes it a bit hard to measure. It also has a licorice-like aftertaste at high concentrations.

Erythritol: Has about 0.8 the strengt of suger so a little bit weaker. Like stevia totally natural product.

I usually take a Erythritol and then add a little bit of stevia. Takes some time to get the proportions right but then u get a sweet flavour without any aftertaste or bitterness.
Doesn´t taste 100% like real suger but its sweet and works well for baking.
I only use it in baking so don´t know how it works in coffe or tea.
