Coconut Smoothie Recipe



Forgot to put this in the post earlier... 


The kids were really getting hungry just before lunch, and I knew it would take me awhile to pull lunch altogether, so I made them a quick smoothie (about 5 oz each) and they loved it. I'm excited about that. It's the first thing they've really been excited about eating. So below is the recipe. Try it out!


4 frozen strawberries.
3 small pieces frozen mango
1/2 cup coconut milk
Splash of vanilla (Organic vanilla is an amazing thing, people!)
3 oz water


Place all these things in a blender and blend until smooth.


Then add one egg.
Add one tablespoon coconut oil.


Blend again. Serve with a crazy straw. 

*** update: the coconut oil has a tendency to lump up in the blender. So I suggest melting the oil first, and then pour it into the blender while *it is running*. *** 


I did not have any, because I'm trying to avoid fruit, but I don't think it's that much sugar at all. It worked out to be one strawberry and 3/4 piece of mango (about 1/2 square inch) for each girl. The rest was fat and protein. 


I didn't think of it at the time, but I should have added some cinnamon since cinnamon is a natural appetite suppressant. Not sure if it would have complimented the fruit flavors, but it's worth a try for the next time, I think.

  2. Is the raw egg a health hazard or is that just hype from conventional "wisdom"?

    1. Yeah, I had a bit of a difficult time getting past the raw egg. But, I think they are safe to eat raw as long as it's been properly handled and eaten right away. I'm told the salmonella lives on the outside of the shell anyway... And, you almost never have issues with eggs if you have a good, healthy gut. The kids have had it twice, and have had no issues. :)

  3. I tried the smoothie this afternoon with just raspberries. Very satisfying and will add it to my snack items myself. Also easy and quick to make. I may leave out the coconut oil--did you melt it first? I got lumps, but then, the lumps tasted quite nice! My mom used to make choc shakes in the morning before I went to school with raw eggs (we raised our own free-range chickens) because I was so skinny! Ha. Those were the days.

    Your girls are adorable! I have 1 daughter (39 yrs. old)who desperately needs the paleo plan, but if she sees how I have changed then perhaps she will want to give it a try. Her daughter (my adorable grandchild) is almost 6. Keep up the excellent job!

    So glad it worked for you! I am going to have to try the raspberries, great idea.

    I did get lumps with the coconut oil the first time I made the recipe. I figured the blender would really smooth it out, but it didn't. Ha! So, yes, the second time I prepared the smoothie, I did melt the coconut oil and I added it *as the blender was running*. I did not have any issues with lumps.
